Fruity sweet potato salad

4 portions

1 sweet potato from North Carolina (300 g)
2 medium apples, alternatively ½ pineapple or 1 mango in pieces
Juice of 1 lemon
2 tablespoons oil, soy cream or sweet cream
Salt, pepper
1 small bunch of chopped parsley or chopped leek onions


  1. Peel sweet potatoes and apples. Remove the core from the apples.
  2. Grate the sweet potato using a grater or food processor.
  3. Cut the apples into very small pieces or grate them as well.
  4. Mix the lemon juice and oil with the grated potatoes and season with salt and pepper.
  5. Sprinkle with the herbs and serve.
